Stir-fry Prawns and Scallop with Assorted Fruit

Ingredients

Scallop (s) 150 g
Prawns 150 g [Meat]
Rock Melon 120 gcut into pieces
Honeydew melon 120 g [cut into pieces]
Strawberry (ies) 2 pcs [cut into pieces]
Kiwi fruit 1 pc [cut into pieces]
Macadamia Nuts 2 heaped tbsp


Marinade

Seasoned Soy Sauce for Seafood 1 tbsp
Lemon Juice 1 tbsp
Lemon Rind 1/2 pc
Water 4 tbsp
Sugar 3 tbsp
Corn starch 2 tsp


Directions
  1. Blanch scallop and prawns in boiling water.  Drain.
  2. Stir-fry scallop and prawns in 2 tbsp oil until lightly golden.  Add sauce mix and cook until thickens.  Stir in fruits, Macadamia nuts and heat through.
